Shiitake Bao Buns with Asian Slaw
Instructions
Heat a pan over high heat and add the sesame oil. Sauté the shiitake mushrooms for about 2 minutes until lightly golden.
Deglaze with the white wine and cook for 1 minute. Add the sake and soy sauce, then continue cooking for 3–4 minutes, until the mushrooms are beautifully caramelised and the sauce has reduced and thickened.
Finish by adding the chopped spring onion and gently stirring.
In a bowl, combine all the ingredients for the Asian slaw and mix well until evenly coated.
To assemble, open the steamed bao buns and layer with the slaw first, followed by the caramelised shiitake mushrooms. Garnish with crispy fried onions for extra crunch.
