Asian Salad with Exotic Mushrooms

Instructions

  1. Mix all dressing ingredients and set aside.
  2. Prepare the mushrooms:
  • Slice King Oyster mushrooms lengthwise.
  • Shred the Oyster mushrooms.
  • Remove the stems from Shiitake mushrooms but keep the caps whole.
  1. Wash the Lollo rosso and Lollo bianco lettuces, pat dry, and arrange them on a large plate or bowl to create a “nest.”
  2. Chop the chives into large pieces and set aside.
  3. Heat a large pan until very hot.
  4. Cook mushrooms in batches to avoid overcrowding, pan-roasting until soft. Repeat until all mushrooms are done.
  5. Toss the warm mushrooms with the dressing. Adjust salt to taste.
  6. Place the dressed mushrooms in the lettuce nest and garnish with chives.
  7. Serve as a centerpiece for dinner parties or enjoy on its own.
