His royal highness, the King Oyster mushroom is the largest of the Oyster mushroom family.
In the wild they are native in the Mediterranean.
Also known as Pleurotus Eryngii (their scientific name!), these mushrooms have a stalk that is hailed for its wonderful umami flavour and its meaty texture! Did anyone say “vegan steak”?
This stout, thickly flesh mushroom is well deserving of the title ‘King Oyster’. It is one of the largest species of mushrooms and has a good shelf life in the fridge.
When cooked it doesn’t lose its shape and it develops typical umami flavours and a fantastic, meaty texture. A chewy, nutty mushroom, this species is far superior to most similar food ingredients.
