Asian Salad with Exotic Mushrooms
Instructions
- Mix all dressing ingredients and set aside.
- Prepare the mushrooms:
- Slice King Oyster mushrooms lengthwise.
- Shred the Oyster mushrooms.
- Remove the stems from Shiitake mushrooms but keep the caps whole.
- Wash the Lollo rosso and Lollo bianco lettuces, pat dry, and arrange them on a large plate or bowl to create a “nest.”
- Chop the chives into large pieces and set aside.
- Heat a large pan until very hot.
- Cook mushrooms in batches to avoid overcrowding, pan-roasting until soft. Repeat until all mushrooms are done.
- Toss the warm mushrooms with the dressing. Adjust salt to taste.
- Place the dressed mushrooms in the lettuce nest and garnish with chives.
- Serve as a centerpiece for dinner parties or enjoy on its own.
