The exquisite summer truffle
Tuber aestivum grows in the summer, which is why it is characterized as a “summer truffle”. This truffle grows mainly in the Mediterranean region, as the warm climate and sunshine that characterize the Med are important environmental factors in its growth.
How to recognize it
Its diameter can vary between 2 and 14 cm and it can weigh up to an astonishing 500g! Truth be told we here at Kyriakides Mushrooms had found a specimen weighing an enormous 750g but that is more of an exception rather than the rule!
Its shape is irregularly spherical with large pyramidal protrusions and its color usually varies in dark brown to black shades
Its clot, i.e. its internal flesh, is tight and hard, initially whitish to light-brown and at maturity it becomes soft dark-brown with many cream-white branches.
Gastronomy
The summer truffle can be combined perfectly with many summery and beloved dishes, such as cheese, salads, fish, light meats, pasta, risotto, lobsters, shrimp, crayfish and even desserts!
Finally, for our wine connoisseurs out there, due to the delicacy of their aroma, summer truffles are ideally combined with white wines.
