Mushroom Döner
Instructions
Marinate the Mushrooms
Mix all marinade ingredients into a thick paste. If it’s too thick, loosen with a splash of water.
Use a fork to horizontally shred the Kking Ooyster mushrooms (refer to YouTube shredding technique).
Leave the Ooyster mushrooms whole, trimming only the stalks.
Coat all mushrooms in the marinade and let sit overnight in the fridge.
Roast
Preheat your oven to 200°C.
Spread the marinated mushrooms and cherry tomatoes on a tray.
Roast for around 20 minutes or until golden brown.
In the final 7 minutes, switch to the grill setting to char the edges slightly.
Prepare the Salad
In a large bowl, combine the roasted tomatoes, red onion, chilli, chopped herbs, and lemon juice.
Season with salt and pepper, mix well, and adjust to taste.
Make the Sauce
In a small bowl, mix the mayo, tahini, paprika, and grated garlic until smooth. Taste and adjust seasoning.
Assemble the Döner
Warm the pitas slightly if needed.
Spread a generous amount of sauce over each pita, add a layer of mushroom döner, then top with salad.
Roll into wraps and toast in a pan or sandwich press until crisp.
Serve warm and enjoy!
