Oyster mushrooms with blue cheese and strawberry preserve

Instructions

Put mushrooms into an ovenproof dish, with smooth side down.

Place a teaspoon of butter, half a teaspoon of strawberry preserve, and a piece of blue cheese on each and drizzle with cream.

Sprinkle with pepper.

Cook uncovered, under grill in a pre-heated oven at 220 C for 5-6 minutes until cheese melts.

The mushrooms are so delicate that they don't need to be completely cooked.

 

 

Chef's Tips

This is one of my favourite plated starters for a dinner party.

This dish can be prepared in advance, kept in a fridge and just baked minutes before serving.

Serve with hot bread.
