White Mushrooms with mozzarella, anchovie and chilli

Serves: 4


Place mushrooms cups on a baking sheet, drizzle with olive oil and season with salt and pepper.

Place them in the oven under a preheated grill for 5-6 minutes ( just long enough to cook slightly ).

Remove and allow to cool.

Place a spoon of mozzarella in each cup , top with an anchovie fillet and some chilli and sprinkle with pepper.

Return to oven and bake until mozzarella starts to melt ( watch them !!! It doesn’t take long ).

Remove and sprinkle with parsley.

Serve immediately.
