Vegan Scallops with King Oyster
For the teriyaki glaze
Add all the materials to a saucepan and cook on medium heat for 10 minutes. Then, thicken the mixture with cornflour which has been dissolved in water.
For the vegan scallops with King Oyster mushrooms
Slice the mushrooms in 2cm rings. Then, place them in a bowl and marinate them with fresh herbs, salt, pepper, 1tbsp of olive oil and garlic cloves.
Place a non-stick pan in medium to high heat. Once hot, add 1 tbsp olive oil in the pan and add the mushrooms in along with the herbs. Cook for 2 to 3 minutes each side. Finally, add 2-3 tbsp teriyaki glaze, the chives and stir well.
Serve together with bamboo shoots, teriyaki glaze, and sesame seeds.
