Shiitake and prawn stifry

Pre-heat a wok or a non-stick pan and drizzle with oil.

Place prawns in the pan in a single layer and allow to turn opaque and then stir.

Add mushrooms, courgette and brocolli, stir or toss occasionally.

This process should not take more than 10 minutes.

The prawns must remain slightly undercooked and the vegetables fresh and crunchy.

When ready add the orange juice, soya, oyster sauce, ginger and chilli and toss through.

Allow to draw in the flavours for 2 minutes and serve immediately.

Whilst the prawns are cooking, boil the noodles for 3 minutes and drain.
