Shiitake and noodles soup


Add the sesame oil in a saucepan. Cook the onion until it softens and gains a golden color. Then, add the mushrooms and cook until softened too. Next, add the mirin, the star anise, the soy sauce, ginger, carrot, and bake in high heat for a further 5 minutes. 

Then, add the broth and cook in medium heat for approximately 30 to 35 minutes. 

Meanwhile, boil the noodles according to the instructions on the pack and, when ready, cool them down with cold water. 

Serve the noodles in a bowl and add the soup on top.Garnish with the fresh herbs, coriander, and onion.
