Marinated sea bass with Oyster mushrooms


Place the sea bass fillets in a large bowl and marinate with the lemon and orange zest, the lemon juice, salt, pepper, 1 tbsp olive oil and chives. Let it sit for about 15 minutes. 

At the same time, add 1 tbsp of olive oil in a pan and cook the onions until they soften. Afterwards, add the mushrooms and simmer until they soften too. Add salt, pepper and the wine. Let it cook until the alcohol evaporates. 

Then, add the coconut milk. Add the edamame beans when the ragout becomes thick.

Afterward, add 1 tbsp of olive oil to a non-stick pan and cook the fillets for 3 to 4 minutes each side. 

Place the fillets in the serving plates and add the mushroom ragout on top.
