Portobello Thai Green Curry
Instructions
Heat a large pan and add all the ingredients for the paste.
Cook for about 10 minutes until softened and aromatic.
Add half the coconut milk and bring to a boil.
Once boiling, transfer the mixture to a blender and add the fresh cilantro, parsley, and spinach.
Once the mixture is smooth, return it to the heat and add the Portobello mushrooms, beans, carrots, and red peppers.
Let simmer until the vegetables are cooked and tender.
Adjust the consistency with more coconut milk if needed.
To serve, place cooked rice on the plate and surround it with the curry.
Finish with fresh green onion, fresh chili, and fresh basil.
