Delicious mushroom soup with microcress

Instructions

 

Finely chop all the mushrooms.

Put a pot on high heat and add 100 mL oil.

Cook one type of mushroom at a time in the pot until well browned.

Repeat the process until all mushrooms are well cooked.

Set aside some mixed mushrooms for serving.

Add a little milk to the pot and blend to a smooth puree.

Adjust the consistency with fresh milk, depending on your preference.

Don’t forget to add salt and pepper each time you add milk.

Heat the soup and serve with an egg yolk and the sautéed mushrooms set aside.
