Fried Mushroom Popcorn with curry-mayo sauce
First, prepare the curry mayo sauce by mixing the curry sauce with the mayonnaise and blending them until they are ready. At the same time, prepare the tempura batter according to the instructions on the package of the tempura flour.
For the mushroom popcorn, begin by adding the flour with cornmeal, salt & pepper in a bowl and mixing them with a whisk.
Then, cut the mushrooms one by one in quarters, place them in the tempura batter and cover them finely. Remove the mushrooms from the tempura batter and place them in the flour mixture already prepared. Repeat this process until all mushrooms are ready.
Finally, warm up the oil in a pot and fry for 3 to 4 minutes, until they are ready.
Serve with the curry mayo sauce and garnish with coriander and chives.
