Mixed mushrooms stuffing for baked potato
Saute the mushrooms, thyme, green peppercorns and garlic in the butter until aromatic and cooked (approx 10 mins).
Remove from the heat and allow to cool slightly.
Remove potatoes from the oven, cut a cross into the top of potato and squeeze with both thumbs and index fingers for the potato to open.
(Use a tea cloth so that you don’t burn your hands!)
Fold the cheese into the mushrooms and fill each potato.
Place under the grill at 220 C and bake until the cheese starts to melt.
