Grilled King Oyster with yellow curry sauce
Start by cutting the mushrooms length-wise in the middle and carve them with a sharp knife.
Sprinkle with olive oil, add salt, pepper and thyme. Mix them and cook on the grill, by starting from the carved side.
Next, place a pot on high heat and add coconut oil. Cook the onion with the garlic until softened. Then, add pepper, carrot and cook for another 2 minutes.
Add the spices, mango marmalade and mix them. Add wine to simmer, until all the alcohol evaporates. Add the water and cook on medium heat for 15 to 20 minutes. Then, remove from fire and grind with a blender until the sauce becomes completely smooth.
Place the sauce back in the pot and add the coconut cream.
Cook for a further 5 minutes until the sauce is ready.
Add the mushrooms, garnish with fresh coriander and you are ready to serve!
