Fried Organic King Oyster

Instructions

Preparing the flour batter:

In a bowl, mix the flour and baking powder.

Add the water and stir until a thick mass is formed.

 

Preparing the Porcini mayonnaise:

In a blender, combine the soy sauce and softened porcini mushrooms until a paste forms.

Whisk the eggs in a bowl until smooth and start adding the vegetable oil very slowly, until mayonnaise forms.

If the mayonnaise is too thick, add a little porcini water.

Add the porcini paste. Salt and pepper to taste if needed.

 

Frying the Organic King Oyster: We’re almost there!

In a pot, heat the vegetable oil to 185°C.

Dip the mushrooms in flour and then in the hot oil.

Fry until golden brown, then remove from the oil and drain on paper towels.

Sprinkle with Cajun seasoning.

Garnish with fresh green onions and serve warm with the mayonnaise.
